4 large Russet potatoes
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded sharp cheddar cheese
8 slices cooked, crumbled bacon
1/2 cup sour cream
2 tablespoons chopped fresh chives
Instructions
Preheat your air fryer to 400°F (200°C).
Wash the potatoes thoroughly. Pierce each potato several times with a fork.
Bake the potatoes in the air fryer for 45 to 55 minutes, or until tender when squeezed.
Remove potatoes and let them cool until you can handle them safely.
Slice each potato in half lengthwise. Scoop out most of the interior flesh, leaving about a 1/4-inch thick shell. Reserve the scooped potato for another use.
Brush the outside and inside of the potato shells lightly with olive oil. Sprinkle with salt and pepper.
Place the shells skin-side down in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 8 minutes.
Flip the skins over. Air fry for another 5 to 7 minutes until the edges are visibly crisp.
Remove the skins from the air fryer. Fill each skin generously with shredded cheddar cheese and crumbled bacon.
Return the filled skins to the air fryer for 2 to 3 minutes, just until the cheese melts.
Top the melted cheese and bacon with a dollop of sour cream and a sprinkle of fresh chives before serving.
Notes
Russet potatoes work best because they have thick skins and fluffy interiors.
Do not overcrowd the air fryer basket; work in batches if necessary to maintain crispness.
For extra crunch, lightly spray the inside of the skins with cooking spray before the final cheese step.
