6 slices thick bread (like brioche or challah)
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1 tablespoon granulated sugar (for batter)
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)

Instructions
Cut each bread slice lengthwise into three equal sticks.
In a shallow dish, whisk together the eggs, milk, vanilla extract, 1/4 teaspoon cinnamon, and 1 tablespoon sugar until combined.
Dip each bread stick into the egg mixture, allowing excess to drip off. Do not soak the bread.
In a separate shallow dish, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the coating.
Lightly spray the air fryer basket with cooking spray.
Place the coated sticks in a single layer in the air fryer basket, working in batches if necessary. Do not overlap them.
Lightly spray the tops of the sticks with cooking spray.
Air fry at 375°F (190°C) for 6 to 8 minutes, flipping halfway through, until golden brown and cooked through.
Immediately transfer the hot sticks to the cinnamon sugar mixture and toss gently to coat evenly.
Serve warm with maple syrup or your preferred dipping sauce.
Notes
For best results, use slightly stale bread; it absorbs the batter better without becoming soggy.
If you want to make these ahead, you can freeze the uncooked, dipped sticks on a baking sheet until solid, then transfer them to a freezer bag. Cook directly from frozen, adding 2-3 minutes to the cook time.
You can substitute almond milk or oat milk for dairy milk in the batter.
