1 (14.75 ounce) can salmon, drained and flaked
1 large egg, lightly beaten
1/4 cup breadcrumbs (use gluten-free if needed)
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/2 teaspoon dried parsley
1/4 teaspoon garlic powder
Pinch of black pepper

Instructions
In a medium bowl, combine the drained salmon, egg, breadcrumbs, mayonnaise, Dijon mustard, parsley, garlic powder, and pepper. Mix gently until just combined; do not overmix.
Form the mixture into 4 equal-sized patties, about 1 inch thick.
Lightly spray the air fryer basket with cooking spray. Place the salmon patties in a single layer in the basket, ensuring they do not touch.
Spray the tops of the patties lightly with cooking spray.
Air fry at 380°F (195°C) for 8 minutes.
Flip the patties carefully and spray the second side with cooking spray. Cook for an additional 4 to 6 minutes, or until golden brown and heated through.
Remove from the air fryer and serve immediately.
Notes
For extra crispiness, you can lightly dust the patties with a thin layer of flour or panko breadcrumbs before spraying with oil.
If you use cooked, leftover salmon instead of canned, you may need to add an extra tablespoon of mayonnaise or binder to keep the mixture moist.
