Quick Air Fryer Stuffed Bell Peppers with Turkey and Quinoa

Follow these steps to make tender bell peppers filled with seasoned ground turkey and quinoa using your air fryer.

Ingredients

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Cut the tops off the bell peppers. Remove the seeds and white membranes. Lightly brush the outside of the peppers with a little olive oil.
  2. In a skillet over medium heat, cook the ground turkey and onion until the turkey is browned and the onion is soft. Drain any excess fat.
  3. Stir in the minced garlic, cooked quinoa, drained diced tomatoes, oregano, salt, and pepper into the skillet. Cook for 2 minutes, stirring well to combine the filling.
  4. Place the hollowed bell peppers upright in the air fryer basket. You may need to work in batches depending on the size of your air fryer.
  5. Spoon the turkey and quinoa mixture evenly into each bell pepper, packing it lightly.
  6. Air fry at 375°F (190°C) for 15 minutes.
  7. If using cheese, sprinkle the cheddar over the top of the filling. Return to the air fryer and cook for an additional 3 to 5 minutes, or until the cheese is melted and the peppers are tender when pierced with a fork.
  8. Carefully remove the peppers from the air fryer and serve immediately.

Notes

  • If your peppers are very large, you may need to increase the cooking time by 3 to 5 minutes to ensure they soften completely.
  • For a vegetarian option, substitute the ground turkey with 1 cup of cooked lentils or black beans.
  • If you do not have cooked quinoa, you can substitute it with cooked white rice.
