3 medium zucchini
1 large egg
1/4 cup all-purpose flour
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt

Instructions
Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into quarters, then cut those quarters into sticks about 3 to 4 inches long.
Place the zucchini sticks on paper towels and pat them very dry. This step helps prevent sogginess.
Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk the egg. In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
Dredge each zucchini stick first in the flour, shaking off any excess.
Dip the floured stick into the egg mixture, allowing excess to drip off.
Coat the stick thoroughly in the Parmesan breadcrumb mixture, pressing gently to make the coating adhere.
Lightly spray the air fryer basket with cooking spray. Arrange the coated zucchini sticks in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary.
Spray the tops of the zucchini sticks lightly with cooking spray.
Air fry at 380°F (195°C) for 10 to 12 minutes, flipping the fries halfway through the cooking time.
Continue cooking until the fries are golden brown and crispy. Serve immediately.
Notes
For extra crispiness, you can let the coated zucchini sticks rest in the refrigerator for 15 minutes before air frying.
Serve with warm marinara sauce or a simple ranch dressing for dipping.
If you prefer a lower-carb option, substitute almond flour for the all-purpose flour.
