Make these simple, copycat Almond Joy Truffles at home. They feature a sweet, chewy coconut center, a whole almond, and a rich chocolate coating. This no-bake dessert is perfect for gifting or parties.

  • 2 cups unsweetened shredded coconut
  • 1/2 cup almond butter
  • 3 tablespoons maple syrup
  • 1 cup dark chocolate chips
  • 1/2 cup whole almonds (for topping)

Instructions

  1. In a medium bowl, combine the shredded coconut, almond butter, and maple syrup. Mix well until you form a sticky dough consistency.
  2. Roll the coconut mixture into small balls, about 1 inch in diameter. Press one whole almond into the center of each ball.
  3. Place a whole almond on top of each ball before chilling. Place the formed balls on a baking sheet lined with parchment paper.
  4. Chill the coconut balls in the refrigerator for at least 30 minutes to firm them up. This step is important for easy dipping.
  5. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. You can also use a double boiler.
  6. Dip each chilled coconut ball into the melted chocolate, ensuring it is fully coated. Let any excess chocolate drip off.
  7. Place the dipped truffles back onto the parchment-lined sheet. If you did not place an almond on top before chilling, press one whole almond onto the top of each wet chocolate coating now.
  8. Refrigerate the finished truffles for another 15 minutes, or until the chocolate is set.

Notes

  • For a richer flavor, use bittersweet chocolate instead of dark chocolate chips.
  • If the coconut mixture seems too dry, add 1 teaspoon of melted coconut oil to help bind it.
  • Store these homemade candy bar treats in an airtight container in the refrigerator.
