Ingredients
Scale
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup granulated sugar
1 cup packed brown sugar
1 cup vegetable oil
4 large eggs
1 teaspoon vanilla extract
1/2 cup applesauce (unsweetened)
1/2 cup buttermilk
3 cups peeled, cored, and chopped apples (Granny Smith recommended)
1/2 cup chopped walnuts (optional)
For the Brown Sugar Glaze:
1/2 cup unsalted butter
1 cup packed brown sugar
1/4 cup milk
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan well.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set this dry mixture aside.
In a large bowl, whisk the granulated sugar, brown sugar, and vegetable oil until combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a small bowl, mix the applesauce and buttermilk together.
Alternate adding the dry ingredient mixture and the buttermilk mixture to the wet ingredients, beginning and ending with the dry ingredients. Mix only until just combined; do not overmix the batter.
Gently fold in the chopped apples and walnuts, if using.
Pour the batter evenly into the prepared Bundt pan.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan on a wire rack for 15 minutes.
Invert the cake onto the wire rack and let it cool completely before glazing.
To make the glaze, melt the butter in a small saucepan over medium heat. Stir in the brown sugar and milk. Bring the mixture to a gentle boil, stirring constantly, and let it boil for exactly one minute. Remove from heat.
Whisk in the powdered sugar and vanilla extract until smooth.
Drizzle the warm brown sugar glaze generously over the cooled cake. Allow the glaze to set before slicing and serving your homemade apple dessert.
Notes
For the moistest cake, use firm, tart apples like Granny Smith or Honeycrisp.
You can prepare this make ahead apple dessert up to one day in advance; store it covered at room temperature.
If you do not have buttermilk, mix 1/2 cup of regular milk with 1/2 teaspoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
