2 teaspoons baking powder
1 teaspoon ground cinnamon

1 cup apple cider
0.5 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon apple cider vinegar
For the Topping:
0.5 cup unsalted butter, melted
1 cup granulated sugar
2 teaspoons ground cinnamon
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 12-cup muffin tin or line with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk together the apple cider, melted butter, eggs, vanilla extract, and apple cider vinegar until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
While the muffins are baking, prepare the topping. In a shallow bowl, combine the cinnamon and sugar for the topping.
Once the muffins are out of the oven, let them cool in the muffin tin for a few minutes.
While still warm, dip the top of each muffin into the melted butter, then immediately roll it in the cinnamon-sugar mixture until well coated.
Transfer the coated muffins to a wire rack to cool completely.
Notes
For an extra burst of apple flavor, you can add finely diced fresh apple to the batter.
