2 tablespoons olive oil
4 (6-ounce) bone-in pork chops
1 teaspoon salt
1/2 teaspoon black pepper
1 cup apple cider
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon fresh thyme leaves
Instructions
Pat pork chops dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear pork chops for 2-3 minutes per side until golden brown.
Remove pork chops from skillet and set aside.
In the same skillet, add apple cider, apple cider vinegar, brown sugar, and Dijon mustard. Bring to a simmer, scraping up any browned bits from the bottom.
Stir in thyme leaves.
Return pork chops to the skillet.
Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until pork chops are cooked through and the glaze has thickened.
Serve pork chops with the glaze spooned over the top.
Notes
For a thicker glaze, simmer uncovered during the last few minutes of cooking.
You can substitute honey or maple syrup for brown sugar if preferred.
Ensure pork chops reach an internal temperature of 145°F (63°C) for safe consumption.
