  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 cups chopped apples
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup all-purpose flour
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. In a small bowl, combine the chopped apples, brown sugar, cinnamon, and the additional 1/4 cup flour. Add pecans if using.
  7. Spread half of the cake batter evenly into the prepared baking pan.
  8. Sprinkle half of the apple cinnamon mixture over the batter.
  9. Spread the remaining cake batter over the apple mixture.
  10. Top with the remaining apple cinnamon mixture.
  11. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  12. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • You can use any type of apple that holds its shape when baked, like Honeycrisp or Gala.
