Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped apples.
  6. To make the streusel topping, combine the flour, brown sugar, granulated sugar, and cinnamon in a small bowl.
  7. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the streusel topping generously over the batter in each muffin cup.
  10. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
