Make quick, healthy, and fluffy banana oatmeal pancakes using only three main ingredients in a blender. This recipe is great for a simple breakfast.

Ingredients

Scale
  • 2 large ripe bananas
  • 1 cup rolled oats (quick or old-fashioned)
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon baking powder (optional, for extra fluff)
  • Cooking spray or butter for the pan

Instructions

  1. Place the rolled oats into a blender. Blend them until they form a fine flour consistency.
  2. Add the ripe bananas, eggs, vanilla extract (if using), and baking powder (if using) to the blender with the oat flour.
  3. Blend the mixture until it is completely smooth. Do not overmix once smooth.
  4. Let the batter rest for 5 to 10 minutes. This allows the oats to absorb moisture, resulting in fluffier pancakes.
  5. Heat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or butter.
  6. Pour batter onto the hot surface to form pancakes of your desired size.
  7. Cook for 2 to 3 minutes per side, until golden brown and set. Flip carefully.
  8. Serve immediately with your favorite toppings.

Notes

  • Use very ripe bananas for the best sweetness and texture.
  • If you prefer a thicker batter, let it rest for 15 minutes.
  • For gluten-free pancakes, ensure your rolled oats are certified gluten-free.
  • This batter does not keep well; cook immediately after resting.
