Make crispy chicken bites coated in a creamy, sweet, and spicy homemade Bang Bang sauce. This recipe is quick enough for a weeknight dinner and tastes better than takeout.

  • 1.5 lbs boneless, skinless chicken breasts or tenders, cut into 1-inch pieces
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or 1 tablespoon oil (for baking)
  • For the Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons Sriracha (adjust to your spice preference)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray or oil.
  2. Set up a dredging station with three shallow dishes. Place flour in the first dish. Whisk the egg in the second dish. Mix panko breadcrumbs, salt, and pepper in the third dish.
  3. Dredge each chicken piece first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the chicken firmly into the panko mixture to coat completely.
  4. Arrange the coated chicken pieces on the prepared baking sheet in a single layer, ensuring they do not touch. Spray the tops lightly with cooking spray.
  5. Bake for 18 to 22 minutes, flipping the chicken halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  6. While the chicken bakes, prepare the sauce. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder until smooth.
  7. Once the chicken is cooked, transfer the crispy pieces to a large bowl. Pour the Bang Bang sauce over the chicken and toss gently until every piece is evenly coated.
  8. Serve immediately over rice, in lettuce cups, or as an appetizer with toothpicks.

Notes

  • For an Air Fryer version, cook the coated chicken at 380°F (195°C) for 10 to 12 minutes, flipping halfway.
  • Adjust the Sriracha amount to control the heat level of your sweet and spicy chicken sauce.
  • To make Bang Bang Chicken Bowls, serve the sauced chicken over cooked white or brown rice with shredded carrots and sliced green onions.
