4 tablespoons unsalted butter
1/2 cup whole milk, warmed

1.5 lbs high-quality pork or beef sausages (Bangers)
2 large yellow onions, thinly sliced
2 tablespoons all-purpose flour
1 cup beef broth
1/2 cup dry red wine or stout (optional, for richer flavor)
1 teaspoon fresh thyme leaves
Instructions
Place the potatoes in a large pot, cover with cold, salted water, and bring to a boil. Cook until fork-tender, about 15 to 20 minutes.
While potatoes cook, prepare the gravy. Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, for 15 to 20 minutes until deeply caramelized and sweet.
Once onions are caramelized, sprinkle them with flour. Stir constantly for one minute to cook out the raw flour taste.
Slowly whisk in the beef broth and red wine or stout, if using. Add the thyme. Bring the mixture to a simmer, stirring until the gravy thickens. Reduce heat to low, cover, and let it gently cook while you finish the rest of the dish. Season the gravy with salt and pepper.
Drain the cooked potatoes well. Return them to the hot pot over low heat for one minute, shaking the pot to dry them out slightly. This step helps make your mashed potatoes creamy.
Remove the pot from the heat. Add the butter and warm milk. Mash the potatoes until smooth and creamy. Season generously with salt and pepper.
Cook the sausages. Heat a large, heavy-bottomed skillet over medium heat. Add the sausages and cook, turning often, until they are browned on all sides and cooked through, about 12 to 15 minutes.
