Make these irresistible BBQ chicken sliders for your next gathering. They feature juicy shredded chicken, tangy sauce, and melted Gouda cheese baked on soft Hawaiian rolls, creating a crowd-pleasing appetizer or easy weeknight dinner.

  • 1 (3 pound) package frozen fully cooked, shredded chicken breast
  • 1 cup your favorite BBQ sauce
  • 1/2 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (12 count) package Hawaiian sweet rolls
  • 8 ounces Gouda cheese, thinly sliced
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large saucepan, combine the shredded chicken, BBQ sauce, water, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper.
  3. Heat the mixture over medium heat, stirring occasionally, until the chicken is heated through and the sauce has slightly thickened, about 10 minutes. This makes your savory pulled chicken.
  4. Slice the Hawaiian rolls horizontally, keeping the bottom and top halves connected if possible. Place the bottom half of the rolls in the prepared baking dish.
  5. Distribute the saucy BBQ chicken evenly over the bottom layer of rolls.
  6. Top the chicken evenly with the slices of Gouda cheese.
  7. Place the top half of the rolls over the cheese.
  8. In a small bowl, whisk together the melted butter, dried minced onion, garlic powder, and dried parsley. Brush this mixture evenly over the top of the rolls.
  9. Bake for 12 to 15 minutes, or until the cheese is fully melted and the tops of the rolls are golden brown and slightly crispy.
  10. Remove from the oven and let the sliders rest for 5 minutes before slicing between the rolls. Serve warm.

Notes

  • For a honey BBQ flavor, substitute 1/4 cup of your BBQ sauce with honey before mixing with the chicken.
  • If you prefer a different cheese, Monterey Jack or sharp cheddar work well in this cheesy chicken sliders recipe.
  • You can prepare the saucy chicken mixture in a slow cooker on low for 3-4 hours if you prefer a hands-off method for your crockpot BBQ chicken.
