Make a rich, velvety beer cheese dip quickly. This recipe uses simple ingredients to create a classic pub-style appetizer perfect for game days and serving with soft pretzels.

  • 1 tablespoon all-purpose flour
  • 1/2 cup beer (lager or pale ale recommended)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, cubed
  • 1/4 teaspoon garlic powder
  • Pinch of salt

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking continuously to prevent lumps. Cook until the mixture thickens slightly, about 2 minutes.
  4. Reduce the heat to low. Add the shredded cheddar cheese and cubed cream cheese, stirring until both cheeses are completely melted and smooth.
  5. Stir in the garlic powder and salt. Taste and adjust seasoning if needed.
  6. Serve immediately while warm with pretzels, chips, or breadsticks.
