1 teaspoon baking powder

1 teaspoon ground cinnamon
1/4 cup maple syrup
1/4 cup melted coconut oil
1 cup milk (dairy or non-dairy)
1 large egg
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
1/4 cup cottage cheese (optional, for texture)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, mix the rolled oats, baking powder, salt, and cinnamon.
In a separate bowl, whisk together the maple syrup, melted coconut oil, milk, egg, vanilla extract, and cottage cheese if you are using it.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the blueberries.
Pour the mixture evenly into the prepared baking pan. Spread the batter to the edges.
Bake for 30 to 35 minutes, or until the top is golden brown and the center is set. A toothpick inserted near the center should come out mostly clean.
Let the oatmeal squares cool completely in the pan on a wire rack. This step is important for firming up the texture so you can cut them cleanly.
Once cool, use the parchment paper overhang to lift the entire block out of the pan. Cut into 9 or 12 squares.
Notes
For a gluten-free option, use certified gluten-free rolled oats.
If you prefer a firmer, less cakey texture, reduce the milk by 2 tablespoons.
These squares freeze well; wrap individual portions tightly in plastic wrap and store in a freezer bag for up to 3 months. Thaw overnight or reheat from frozen.
For easier cutting, chill the baked oatmeal in the refrigerator for at least one hour before slicing.
