Make crispy, sweet, and salty bacon using a simple brown sugar glaze. This recipe is suitable for baking in the oven.

  • 1 pound thick cut bacon
  • 1/2 cup packed brown sugar
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the lined baking sheet.
  2. In a small bowl, mix the brown sugar, black pepper, and cayenne pepper, if using.
  3. Lay the bacon strips in a single layer on the wire rack. Do not let the strips overlap.
  4. Sprinkle the brown sugar mixture evenly over the top side of the bacon strips. Press the sugar mixture lightly onto the bacon.
  5. Bake for 15 minutes.
  6. Remove the pan from the oven. Carefully flip each bacon strip using tongs.
  7. Sprinkle the remaining brown sugar mixture over the second side of the bacon.
  8. Return the pan to the oven and bake for another 10 to 15 minutes, or until the bacon reaches your desired crispness and the glaze is bubbly. Cooking time varies based on bacon thickness.
  9. Remove the bacon from the oven and immediately transfer the strips to a plate lined with paper towels to drain excess grease. Let the bacon cool slightly before serving; the glaze will firm up as it cools.

Notes

  • For a deeper flavor, substitute 1 tablespoon of the brown sugar with 1 tablespoon of bourbon before mixing the glaze.
  • If you prefer a crispier result, use thin-cut bacon, but reduce the total cooking time by 5 to 7 minutes.
  • This bacon works well as an appetizer or a side dish for breakfast.
