  • 1 pound elbow macaroni
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tablespoons butter
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Gruyère cheese

Instructions

  1. Cook macaroni according to package directions. Drain and set aside.
  2. Steam or boil butternut squash until tender. Mash or puree until smooth.
  3. In a large saucepan, melt butter over medium heat.
  4. Add pureed butternut squash, milk, salt, pepper, and nutmeg. Stir well.
  5. Gradually add cheddar and Gruyère cheeses, stirring until melted and smooth.
  6. Add cooked macaroni to the cheese sauce and stir to combine.
  7. Serve warm.
