1 medium head green cabbage, thinly sliced
1 tablespoon neutral cooking oil (like canola or vegetable)
1 tablespoon fresh ginger, minced
4 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon cornstarch
2 tablespoons water
Optional: 1/2 cup sliced carrots or bell peppers
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water until the cornstarch is dissolved. Set aside.
Heat the cooking oil in a large skillet or wok over medium-high heat until shimmering.
Add the minced ginger and garlic to the hot oil. Stir fry for about 30 seconds until fragrant, being careful not to burn the garlic.
Add the sliced cabbage (and any optional vegetables like carrots) to the wok. Stir fry vigorously for 3 to 5 minutes until the cabbage begins to wilt but remains crisp-tender.
Give the prepared sauce a quick re-whisk, then pour it over the cabbage mixture.
Continue to stir fry for 1 to 2 minutes, tossing constantly, until the sauce thickens and evenly coats the vegetables.
Remove from heat immediately and serve hot.
Notes
For a firmer texture, cook the cabbage in batches to avoid overcrowding the pan.
If you want to add protein, cook chicken, tofu, or shrimp first, remove it from the pan, and add it back in when you add the sauce.
For a spicier flavor, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
