  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 large red onion, cut into wedges
  • 1 lb broccoli florets
  • 3 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, 1 tablespoon of Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. In the same bowl, add the chopped bell peppers, red onion wedges, and broccoli florets. Drizzle with the remaining 2 tablespoons of olive oil and sprinkle with the remaining 1 tablespoon of Cajun seasoning, salt, and pepper. Toss to coat all the vegetables evenly.
  4. Arrange the seasoned chicken and vegetables in a single layer on a large baking sheet. Ensure there is some space between the pieces for even roasting.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  6. Serve hot directly from the pan.
