2 slices of bread
1 tablespoon butter, softened
2-3 slices fresh mozzarella cheese
2-3 thin slices ripe tomato
3-4 fresh basil leaves
Pinch of salt
Pinch of black pepper
Instructions
Spread butter evenly on one side of each slice of bread.
Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
Layer the mozzarella cheese on top of the bread in the skillet.
Arrange the tomato slices over the mozzarella.
Sprinkle with salt and pepper.
Place the basil leaves on top of the tomatoes.
Top with the second slice of bread, butter-side up.
Grill for 3-4 minutes, or until the bottom slice of bread is golden brown and the cheese begins to melt.
Carefully flip the sandwich using a spatula.
Grill the other side for another 3-4 minutes, or until golden brown and the cheese is fully melted and gooey.
Remove from skillet, slice in half, and serve immediately.
Notes
For extra flavor, you can lightly toast the bread before buttering.
