  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise. Scoop out the seeds and some of the flesh to create a boat.
  3. Brush the zucchini boats with olive oil and season with salt and pepper.
  4. Arrange the zucchini boats on a baking sheet.
  5. In a bowl, combine the halved cherry tomatoes, diced mozzarella, chopped basil, minced garlic, salt, and pepper.
  6. Gently stir the ingredients together.
  7. Spoon the Caprese mixture evenly into the zucchini boats.
  8. Bake for 20-25 minutes, or until the zucchini is tender and the mozzarella is melted and bubbly.
