  • 3/4 cup buttermilk
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup hot strong brewed coffee
  • For the Glaze: 1 cup white chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon gelatin powder
  • 1/4 cup cold water (for blooming gelatin)
  • Black, deep blue, and silver food coloring gel

Instructions

  1. Prepare the cake: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add the eggs, buttermilk, oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes.
  4. Carefully stir in the hot coffee until the batter is smooth. The batter will be thin.
  5. Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  7. Prepare the mirror glaze: Sprinkle the gelatin powder over the 1/4 cup of cold water in a small bowl and let it bloom for 5 minutes.
  8. In a saucepan, combine the white chocolate chips, condensed milk, 1/4 cup water, and sugar. Heat over medium-low heat, stirring constantly until the chocolate is melted and the mixture is smooth. Do not boil.
  9. Remove the saucepan from the heat. Stir in the bloomed gelatin until it is fully dissolved.
  10. Strain the glaze mixture through a fine-mesh sieve into a measuring cup to remove any lumps. Let it cool to about 95°F (35°C).
  11. Divide the glaze into three separate bowls. Color one bowl black, one deep blue, and leave one white or lightly silvered.
  12. Pour the colored glazes back into one container, swirling gently once or twice to create a marbled effect, but do not fully mix.
  13. Place the completely cooled cake on a wire rack set over a baking sheet. Pour the glaze over the cake, starting from the center and moving outward to cover the top and sides completely.
  14. Use a small, clean paintbrush dipped in silver food coloring to paint the Capricorn constellation pattern onto the glazed surface.
  15. Allow the glaze to set for 15 minutes before carefully transferring the cake to a serving plate.
