Make this hearty, cheesy beef and rice casserole for a satisfying comfort food dinner. This easy bake is perfect for a family meal.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 can (10.5 ounces) condensed cream of celery soup
  • 1 cup water
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess fat.
  3. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
  4. In a large bowl, combine the cream of mushroom soup, cream of celery soup, water, parsley, garlic powder, salt, and pepper. Stir well.
  5. Add the cooked rice and the beef and onion mixture to the soup mixture. Stir everything together until fully combined.
  6. Pour the mixture into the prepared baking dish.
  7. In a small bowl, mix the shredded cheddar cheese with the milk until it forms a thick sauce or paste.
  8. Spread the cheese mixture evenly over the top of the beef and rice mixture in the baking dish.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese topping is melted and lightly golden.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup for cream of celery soup if you prefer.
  • For a richer flavor, use cooked brown rice instead of white rice.
  • This casserole freezes well before baking; cover tightly and freeze for up to three months. Thaw overnight in the refrigerator before baking.
