1 cup uncooked white rice
2 cups water
1 cup chopped broccoli florets
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup shredded cheddar cheese
1/4 cup milk
1/4 teaspoon black pepper
Optional: 1/4 cup buttered breadcrumbs
Instructions
Preheat your oven to 375°F (190°C).
Cook the rice according to package directions.
While the rice cooks, steam or boil the broccoli until tender-crisp.
In a large bowl, combine the cooked rice, broccoli, cream of mushroom soup, shredded cheddar cheese, milk, and black pepper. Mix well until everything is evenly coated.
Pour the mixture into a greased 8×8 inch baking dish.
If using, sprinkle the buttered breadcrumbs evenly over the top.
Bake for 20-25 minutes, or until the casserole is heated through and bubbly, and the topping is golden brown.
Let it rest for a few minutes before serving.
Notes
You can use fresh or frozen broccoli. If using frozen, thaw and drain it before adding to the casserole.
Feel free to add other seasonings like garlic powder or onion powder to taste.
For an extra cheesy casserole, you can add a little Parmesan cheese along with the cheddar.
This casserole can be assembled ahead of time and baked when ready.
