1 pound fettuccine or penne pasta
2 cups cooked, shredded chicken breast
1 (15 ounce) container Alfredo sauce (jarred or homemade)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup shredded mozzarella cheese, divided
1 tablespoon butter, melted (for topping)
1/4 cup breadcrumbs (optional, for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the pasta according to package directions until al dente. Drain well and set aside.
In a large bowl, combine the cooked pasta, shredded chicken, Alfredo sauce, heavy cream, Parmesan cheese, black pepper, and garlic powder. Mix gently until everything is evenly coated.
Pour the pasta mixture into the prepared baking dish, spreading it into an even layer.
Sprinkle 3/4 cup of the mozzarella cheese evenly over the top of the pasta mixture.
In a small bowl, mix the remaining 1/4 cup mozzarella cheese with the melted butter and breadcrumbs, if using. Sprinkle this mixture over the top layer of cheese.
Bake for 20 to 25 minutes, or until the sauce is bubbly around the edges and the mozzarella topping is melted and lightly golden brown.
Let the bake rest for 5 minutes before serving.
Notes
If you are cooking raw chicken, cook 1.5 pounds of chicken breast, shred it, and use 2 cups for this recipe.
For a richer sauce, substitute half of the heavy cream with cream cheese, softened.
You can prepare this dish entirely, cover it, and refrigerate it up to 24 hours before baking. Add 10 minutes to the bake time if cooking directly from the refrigerator.
