1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups chicken broth
8 ounces dry pasta (like penne or rotini)
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup shredded white cheddar cheese
1/4 cup grated Parmesan cheese
Instructions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
Add the chopped onion to the same pot and cook until softened, about 3 minutes. Add the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the chicken broth and bring the mixture to a boil. Add the dry pasta. Reduce the heat to medium-low, cover, and simmer for about 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender.
Stir in the heavy cream and the cooked chicken. Continue to cook, uncovered, for 2 minutes, allowing the sauce to thicken slightly.
Remove the pot from the heat. Stir in the mozzarella cheese, white cheddar cheese, and Parmesan cheese until the cheese melts and the sauce becomes creamy.
Serve immediately.
Notes
For extra flavor, use Cajun seasoning instead of Italian seasoning.
If the sauce seems too thick, add a splash more chicken broth or milk until you reach your desired consistency.
You can substitute rotisserie chicken for raw chicken to save cooking time.
