1 pound ground beef
1 medium onion, chopped
1 packet (1 ounce) taco seasoning mix
1 can (10 ounces) Ro-Tel diced tomatoes and green chilies, undrained
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 jar (16 ounces) processed cheese sauce (queso)
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1 cup crushed tortilla chips
1 tablespoon vegetable oil
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Heat the oil in a large skillet over medium heat. Add the ground beef and onion. Cook until the beef is browned and the onion is soft, breaking up the meat as it cooks. Drain off any excess grease.
Stir the taco seasoning mix, Ro-Tel, black beans, and corn into the beef mixture. Cook for 5 minutes, stirring occasionally.
Spread half of the beef mixture evenly into the bottom of the prepared baking dish.
Pour half of the jarred queso sauce over the beef layer. Sprinkle with half of the Monterey Jack and Cheddar cheese blend.
Spoon the remaining beef mixture over the cheese layer. Top with the remaining queso sauce.
Sprinkle the remaining shredded cheese over the top layer.
Bake for 20 minutes, or until the casserole is bubbly.
Remove from the oven and immediately sprinkle the crushed tortilla chips over the top. Return to the oven and bake for an additional 5 minutes, or until the chips are lightly toasted and the cheese is fully melted.
Notes
For a smoother queso, gently warm the jarred sauce on the stovetop before pouring it over the layers.
You can prepare the entire casserole, cover it, and refrigerate it for up to 24 hours before baking. Add 10-15 minutes to the initial baking time if baking from cold.
Serve with toppings like sour cream, sliced jalapeños, or fresh cilantro.
