Make hearty, savory stuffed bell peppers filled with seasoned ground beef, rice, and topped with melted cheese. This baked recipe is a simple family dinner.

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the hollowed peppers cut-side up in the prepared baking dish.
  3. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess grease.
  4. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  5. Stir in the oregano, salt, and pepper. Mix well.
  6. Remove the skillet from the heat. Stir in the cooked rice and half of the tomato sauce (about 7 tablespoons). Mix until combined.
  7. Spoon the beef and rice mixture evenly into the hollowed bell peppers.
  8. Pour the remaining tomato sauce around the base of the peppers in the baking dish.
  9. Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
  10. Remove the foil. Sprinkle the remaining cheddar cheese over the top of each pepper.
  11. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the peppers are tender.

Notes

  • You can use any color bell pepper you prefer, though green peppers have a slightly stronger flavor.
  • For a richer sauce flavor, substitute half of the tomato sauce with your favorite marinara sauce.
  • If you prefer a softer pepper, you can boil or microwave the peppers for 5 minutes before stuffing them.
