  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 12 taco shells (hard or soft)
  • Optional toppings: lettuce, diced tomatoes, salsa

Instructions

  1. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 to 7 minutes, or until most of the liquid has evaporated.
  3. Reduce the heat to low. Add the softened cream cheese and half of the shredded cheddar cheese (1/2 cup) to the meat mixture. Stir constantly until the cream cheese is fully melted and incorporated, creating a creamy texture.
  4. Remove the skillet from the heat. Stir in the sour cream until just combined. Do not return the mixture to high heat after adding the sour cream.
  5. Warm the taco shells according to package directions.
  6. Fill each taco shell with the creamy ground beef mixture.
  7. Top with the remaining 1/2 cup of shredded cheddar cheese and your desired toppings.

Notes

  • For extra flavor, add 1 teaspoon of chili powder and 1/2 teaspoon of cumin along with the taco seasoning.
  • If you prefer a sharper cheese flavor, substitute Monterey Jack for half of the cheddar cheese.
  • You can prepare the meat filling up to two days ahead and store it in the refrigerator. Reheat gently on the stovetop before serving.
