30-Minute Restaurant-Style Chicken Fried Rice (Better Than Takeout)

Make this easy, one-pan chicken fried rice that tastes better than delivery. It uses day-old rice and comes together in under 30 minutes for a satisfying weeknight dinner.

  • 2 tablespoons vegetable oil, divided
  • 1 pound boneless, skinless chicken breast, cut into 1/2-inch pieces
  • 2 large eggs, lightly beaten
  • 3 cups cold, day-old cooked white rice
  • 1 cup frozen peas and carrots mix
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce (use low sodium if preferred)
  • 1 tablespoon oyster sauce
  • 1 teaspoon toasted sesame oil
  • 2 green onions, sliced, for garnish

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  2. Add the remaining 1 tablespoon of oil to the skillet. Pour in the beaten eggs. Scramble the eggs quickly until just set, then break them into small pieces with your spatula. Remove the eggs and set them aside with the chicken.
  3. Add the frozen peas and carrots to the hot skillet. Stir fry for 2 minutes until they are heated through. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the cold, day-old rice to the skillet. Break up any clumps with your spatula. Stir fry for 3 to 4 minutes, pressing the rice against the hot surface to help it heat evenly and become fluffy.
  5. Return the cooked chicken and eggs to the skillet. Pour the soy sauce and oyster sauce over the rice mixture. Toss everything together quickly until the rice is evenly coated and heated through, about 2 minutes.
  6. Stir in the toasted sesame oil. Taste the rice and add a little more soy sauce if you want more saltiness.
  7. Remove the skillet from the heat. Garnish with sliced green onions before serving immediately.

Notes

  • Using cold, day-old rice is the secret to fluffy fried rice; fresh rice will become mushy.
  • For a stronger flavor, use slightly less soy sauce and add a teaspoon of fish sauce with the other sauces.
  • If you want more garlic flavor, increase the garlic to 4 cloves.
  • This recipe works well as a main dish or a hearty side dish.
