1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1/4 cup coconut milk
2 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon salt
1/4 cup creamy peanut butter
3 tablespoons hot water
2 tablespoons lime juice
1 tablespoon soy sauce
1 tablespoon honey or maple syrup
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
Pinch of red pepper flakes (optional)
Wooden skewers, soaked in water for 30 minutes
Instructions
In a bowl, combine the coconut milk, 2 tablespoons soy sauce, brown sugar, turmeric, cumin, coriander, and salt. Add the chicken pieces and toss to coat completely. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
While the chicken marinates, prepare the peanut sauce. In a small saucepan, whisk together the peanut butter, hot water, lime juice, 1 tablespoon soy sauce, honey, garlic, ginger, and red pepper flakes, if using.
Heat the sauce mixture over low heat, stirring constantly until smooth and creamy. Remove from heat and set aside. If the sauce is too thick, add water, one teaspoon at a time, until you reach your desired dipping consistency.
Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a small space between each piece.
Cook the skewers using your preferred method: Grill over medium heat for 4-5 minutes per side until cooked through, or bake at 400°F (200°C) for 15-20 minutes, turning halfway. For air fryer, cook at 375°F (190°C) for 10-12 minutes, flipping halfway.
Serve the hot chicken satay immediately with the creamy peanut dipping sauce.
Notes
Soaking the wooden skewers prevents them from burning on the grill or in the oven.
For extra flavor, you can brush the chicken with a little melted butter or oil during the last few minutes of cooking.
If you prefer a thinner sauce, use smooth peanut butter instead of creamy.
