  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 8-10 corn tortillas
  • Optional Toppings: chopped cilantro, diced onion, salsa, avocado, sour cream, shredded lettuce

Instructions

  1. In a bowl, whisk together lime juice, olive oil, chili powder, cumin, garlic powder, cayenne pepper (if using), salt, and pepper.
  2. Add chicken thighs to the marinade, ensuring they are fully coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Preheat your grill to medium-high heat.
  4. Grill chicken thighs for 6-8 minutes per side, or until cooked through and slightly charred.
  5. Let the chicken rest for 5 minutes before dicing or shredding.
  6. Warm the tortillas on the grill or in a skillet.
