2 cups long-grain white rice
2 1/2 cups water
1 teaspoon salt
2 tablespoons vegetable oil or butter
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh lime juice (from about 2 limes)
Zest of 1 lime
Instructions
Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. Drain well.
Combine the rinsed rice, water, salt, and oil or butter in a medium saucepan.
Bring the mixture to a boil over medium-high heat.
Once boiling, immediately reduce the heat to the lowest setting, cover the pot tightly, and simmer for 15 minutes without lifting the lid.
Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting period.
Remove the lid. Fluff the rice gently with a fork.
Stir in the chopped cilantro, lime juice, and lime zest until evenly distributed.
Taste and add more salt or lime juice if needed before serving with your burrito bowls.
Notes
For a quicker method, use a rice cooker: Combine rinsed rice, water, salt, and oil/butter in the cooker. Cook according to your machine’s white rice setting. Once finished, fluff and stir in the cilantro, lime juice, and zest.
If you prefer a less intense lime flavor, start with 3 tablespoons of lime juice and add more to taste after fluffing.
This rice works well for meal prepping; store cooled rice in an airtight container in the refrigerator for up to 4 days.
