1 sheet frozen puff pastry, thawed
8 ounces brie cheese, rind removed and cut into small cubes
1/2 cup whole berry cranberry sauce
1 egg, beaten (for egg wash)
Optional: 1/4 cup chopped pecans
Optional: 1 tablespoon honey or balsamic glaze for drizzling
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place one cube of brie cheese in the center of each pastry square.
Top the brie with about 1 teaspoon of cranberry sauce. If using pecans, sprinkle a few on top of the sauce.
Fold the corners of the pastry up over the filling to meet in the middle, pinching the seams together to seal the bite. You can trim excess dough if needed.
Place the sealed bites seam-side down on the prepared baking sheet.
Brush the tops of the pastry bites lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and let cool slightly on the sheet. Drizzle with honey or balsamic glaze, if desired, before serving warm.
Notes
For make-ahead preparation, assemble the bites completely, place them on the baking sheet, cover, and refrigerate for up to 4 hours before baking. Add 2-3 minutes to the baking time if baking directly from the refrigerator.
If you prefer a different base, you can substitute crescent roll dough for puff pastry, though the texture will be less flaky.
For a fresh herb note, add a tiny sprig of fresh rosemary on top of the cranberry sauce before sealing the pastry.
