  • 1 cup fresh or frozen cranberries
  • 1/4 cup chopped candied orange peel
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Orange glaze (optional): 1 cup powdered sugar, 2-3 tablespoons orange juice

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Gently stir in the cranberries and candied orange peel.
  4. In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract. Add the orange zest.
  5. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. If desired, prepare the orange glaze by whisking together powdered sugar and orange juice until smooth. Drizzle over the cooled muffins.

Notes

  • For a moister muffin, you can add an extra tablespoon of oil.
  • If using frozen cranberries, do not thaw them before adding to the batter.
  • You can substitute fresh orange zest with 1 teaspoon of orange extract if needed.
