  • Pinch of nutmeg

  1. Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until softened, about 2 minutes.
  2. Add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic brown.
  3. Add the thoroughly squeezed, dry spinach to the saucepan. Stir to combine with the aromatics.
  4. Pour in the heavy cream. Bring the mixture to a gentle simmer.
  5. Reduce the heat to low. Add the cubed cream cheese and stir constantly until it melts completely and the sauce thickens slightly. This creates your creamy vegetable side base.
