Creamy Vegan Avocado Pesto Pasta

Make a quick, no-cook, vibrant green pasta sauce using fresh avocado for a creamy texture.

Ingredients

  • 12 oz pasta (spaghetti or linguine recommended)
  • 2 ripe avocados
  • 1/2 cup fresh basil leaves
  • 1/4 cup nutritional yeast
  • 2 cloves garlic
  • 1/4 cup fresh lemon juice
  • 1/4 cup water (or more, for thinning)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of the starchy pasta water before draining.
  2. While the pasta cooks, combine the avocados, basil, nutritional yeast, garlic, lemon juice, water, olive oil, salt, pepper, and red pepper flakes in a food processor or high-speed blender.
  3. Blend the sauce ingredients until completely smooth and creamy. Add reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  4. Drain the cooked pasta and return it to the pot.
  5. Add the avocado sauce to the warm pasta. Toss well to coat everything evenly. If the sauce seems too thick, add a little more pasta water.
  6. Serve immediately.

Notes

  • Use slightly under-ripe avocados if you prefer a very thick sauce.
  • Add a handful of fresh spinach to the blender with the other ingredients for an even brighter green color and extra nutrients.
  • For a richer flavor, substitute half of the water with vegetable broth.
