1 pound fettuccine pasta
1 tablespoon olive oil
1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup chopped yellow onion
1 cup heavy cream
1 cup chicken broth
8 ounces cream cheese, cubed
1 cup grated Parmesan cheese
2 tablespoons Cajun seasoning (or to taste)
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley for garnish
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
Cook the fettuccine according to package directions until al dente. Drain the pasta and set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Add the chopped onion to the same skillet and cook until softened, about 3 minutes.
Reduce the heat to medium-low. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer.
Whisk in the cream cheese cubes until they melt completely and the sauce is smooth.
Stir in the Cajun seasoning, garlic powder, black pepper, and salt. Mix well to combine the spices.
Remove the skillet from the heat. Stir in the Parmesan cheese until the sauce thickens slightly.
Return the cooked chicken and the drained pasta to the skillet. Toss everything gently until the chicken and pasta are fully coated in the sauce.
Pour the mixture into the prepared baking dish.
Sprinkle the shredded mozzarella cheese evenly over the top.
Bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
Let the bake rest for 5 minutes before garnishing with fresh parsley and serving.
