1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 tbsp Cajun seasoning
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 tsp black pepper
1/4 tsp salt (or to taste)
2 tbsp chopped fresh parsley, for garnish
Instructions
Toss chicken pieces with Cajun seasoning.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
Stir in minced garlic and cook for 1 minute more until fragrant.
Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly.
Return the browned chicken to the skillet. Season with black pepper and salt. Stir to coat the chicken in the sauce.
Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce is creamy.
Garnish with fresh parsley before serving.
Notes
Adjust the amount of Cajun seasoning to your spice preference.
For a thicker sauce, simmer for a few extra minutes.
