1 pound linguine
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1/2 cup chopped onion
2 cloves garlic, minced
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Salt and black pepper to taste
Instructions
Cook linguine according to package directions. Drain, reserving about 1/2 cup of pasta water.
While pasta cooks, heat olive oil in a large skillet over medium heat.
Add shrimp and Cajun seasoning. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet.
Add onion to the skillet and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Pour in heavy cream and bring to a simmer. Cook for 3-5 minutes, stirring occasionally, until slightly thickened.
Stir in Parmesan cheese until melted and smooth.
Return shrimp to the skillet. Add cooked linguine and toss to coat.
If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Stir in parsley. Season with salt and pepper to taste.
Notes
You can adjust the amount of Cajun seasoning to control the spice level.
Feel free to add other vegetables like bell peppers or spinach for extra flavor and nutrients.
For a richer sauce, you can add a tablespoon of butter.
