Make a rich, velvety soup featuring tender chicken and soft potato gnocchi on the stovetop.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 6 cups chicken broth
  • 1 (16 ounce) package shelf-stable potato gnocchi
  • 1/2 cup all-purpose flour
  • 1/2 cup cold water
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
  2. Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until the vegetables soften, about 8 minutes.
  3. Stir in the minced garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  4. In a small bowl, whisk together the flour and cold water until smooth to create a slurry. Pour the slurry into the pot, stirring constantly.
  5. Slowly pour in the chicken broth, stirring well to combine and prevent lumps. Bring the mixture to a simmer.
  6. Return the cooked chicken to the pot. Add the gnocchi. Cook according to package directions, usually until the gnocchi float to the surface, about 3 to 5 minutes.
  7. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese. Heat through gently, but do not let the soup boil after adding the cream.
  8. Season with salt and pepper to your taste. Serve hot.

Notes

  • For a quicker preparation, use pre-cooked rotisserie chicken instead of raw chicken breast. Add the shredded chicken during step 6.
  • You can substitute half-and-half for heavy cream for a slightly lighter soup.
  • Add a handful of fresh spinach during the last 2 minutes of cooking for added greens.
