2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup chopped yellow onion
1 cup chopped carrots
1 cup chopped celery
2 cloves garlic, minced
6 cups chicken broth
1 teaspoon dried Italian seasoning
Salt and freshly ground black pepper to taste
1 cup heavy cream
1 (16 ounce) package potato gnocchi
2 cups fresh spinach
1/4 cup grated Parmesan cheese, for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more until fragrant.
Pour in chicken broth and add Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
Stir in heavy cream and bring the soup back to a gentle simmer. Do not boil.
Add the gnocchi and cook according to package directions, usually 2-3 minutes, until they float to the surface.
Return the cooked chicken to the pot. Stir in spinach and cook until wilted, about 1-2 minutes.
Serve hot, garnished with Parmesan cheese.
Notes
For a thicker soup, you can use 1 tablespoon of cornstarch mixed with 2 tablespoons of water and stir it into the simmering soup before adding the gnocchi.
Feel free to add other vegetables like peas or mushrooms.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
