Make this rich, satisfying one-pot meal featuring tender gnocchi, shredded chicken, bacon, and a creamy ranch-seasoned sauce. It is ready quickly for a cozy weeknight dinner.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 slices bacon, chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (16 ounce) package potato gnocchi
  • 4 cups chicken broth
  • 1 (8 ounce) package cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides, about 5 minutes. Remove chicken and set aside.
  2. Add chopped bacon to the pot and cook until crisp. Remove bacon with a slotted spoon, leaving about 1 tablespoon of bacon grease in the pot.
  3. Add onion to the pot and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the gnocchi, chicken broth, cream cheese cubes, ranch seasoning mix, Italian herbs, and black pepper. Bring the mixture to a simmer.
  5. Reduce heat to medium-low, cover, and cook for 8 to 10 minutes, stirring occasionally until the gnocchi is tender and the sauce has thickened.
  6. Return the cooked chicken to the pot. Stir in the fresh spinach until it wilts into the sauce, about 2 minutes.
  7. Remove the pot from the heat. Stir in the shredded Parmesan cheese until fully melted and the sauce is smooth and creamy.
  8. Serve immediately, topped with the reserved crispy bacon and fresh parsley.

Notes

  • If the sauce seems too thick, add a splash of milk or extra chicken broth until you reach your desired consistency.
  • You can substitute pre-cooked rotisserie chicken for the raw chicken breasts to save 10 minutes of cooking time.
  • For a tangier flavor, add 1/4 cup of sour cream along with the cream cheese.
