A rich, low-carb alternative to mashed potatoes featuring a strong roasted garlic flavor and a smooth, creamy texture.

  • 1 large head cauliflower (about 2 lbs)
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter or ghee
  • 1/4 cup heavy cream or full-fat coconut milk
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Peel the garlic cloves and toss them with 1 tablespoon of olive oil on a small piece of foil. Wrap the foil into a packet.
  2. Cut the cauliflower into florets. Place the florets in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until very tender, about 10-15 minutes.
  3. While the cauliflower cooks, place the garlic packet in the oven and roast for 15-20 minutes until soft and golden brown.
  4. Drain the cooked cauliflower thoroughly in a colander. Let it sit for 5 minutes to allow excess steam and water to escape. Press gently with a paper towel if needed to remove more moisture.
  5. Transfer the drained cauliflower to a large, dry skillet over medium heat. Cook, stirring occasionally, for 3-5 minutes to dry out any remaining surface moisture.
  6. Squeeze the roasted garlic from its skin directly into the skillet. Add the butter, heavy cream, salt, and pepper.
  7. Mash the mixture using a potato masher or an immersion blender until smooth. Do not over-process if using a blender, as it can become watery.
  8. Stir in the Parmesan cheese, if using. Taste and adjust salt and pepper. Serve immediately.

Notes

  • For the creamiest texture, ensure you cook the cauliflower until very soft and dry it thoroughly before mashing.
  • If you prefer a dairy-free version, substitute the butter with ghee or coconut oil and use full-fat coconut milk for the cream.
  • To achieve a steakhouse style, use browned butter instead of regular melted butter.
