Cook a rich, creamy mushroom and shrimp alfredo dinner entirely in one skillet for fast preparation and minimal cleanup.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces mixed mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese, plus more for serving
  • 4 ounces cream cheese, cut into cubes
  • 8 ounces fettuccine or linguine pasta
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large, deep skillet over medium-high heat. Season shrimp with salt and pepper. Add shrimp to the skillet and cook for 1 to 2 minutes per side until pink. Remove shrimp and set aside.
  2. Add mushrooms to the same skillet and cook until they release their liquid and start to brown, about 5 to 7 minutes. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  4. Stir in the Parmesan cheese and cubed cream cheese. Whisk gently until the cream cheese melts and the sauce is smooth and creamy. Do not let the sauce boil rapidly.
  5. Add the dry pasta directly to the sauce. Stir to coat. Cover the skillet and reduce heat to medium-low. Cook for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed. If the sauce becomes too thick, add a splash of water or broth.
  6. Return the cooked shrimp to the skillet. Stir gently to heat through, about 1 minute.
  7. Garnish with fresh parsley and extra Parmesan cheese before serving immediately.

Notes

  • To prevent a grainy sauce, add the Parmesan cheese off the highest heat and whisk slowly until fully incorporated.
  • Cook the shrimp just until opaque; overcooking makes them tough.
  • Use fresh, good quality Parmesan cheese for the best melting texture.
