Prepare this simple, one-pan creamy mushroom chicken for a quick weeknight dinner. This recipe uses basic ingredients to create a rich sauce.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add sliced mushrooms to the same skillet. Cook until they release their liquid and start to brown, about 5 minutes.
  4. Add minced garlic to the mushrooms and cook for 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  6. Reduce heat to medium-low. Stir in heavy cream and Italian seasoning. Bring the sauce to a gentle simmer.
  7. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened. Do not boil.
  8. Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Cook for 1-2 minutes until the chicken is heated through.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve this skillet dish over rice, pasta, or with crusty bread to soak up the extra sauce.
  • If you prefer a thinner sauce, use half-and-half instead of heavy cream, or add a splash more broth.
  • You can use chicken thighs instead of breasts; adjust cooking time as needed.
