1 pound fettuccine pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
2 tablespoons unsalted butter
2 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese, plus more for serving
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
5 ounces fresh spinach
Instructions
Cook the fettuccine according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
While the pasta cooks, season the chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through, about 5-7 minutes. Remove the chicken and set it aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic brown.
Pour in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally. Cook for 3-5 minutes until the sauce slightly thickens.
Reduce the heat to low. Gradually stir in the grated Parmesan cheese until the sauce is smooth and creamy. Stir in the salt, pepper, and nutmeg.
Add the fresh spinach to the sauce and cook until it wilts, about 1-2 minutes.
Return the cooked chicken to the skillet. Add the drained pasta. Toss everything together until the pasta is fully coated in the sauce. If the sauce seems too thick, add a little of the reserved pasta water until you reach your desired creaminess.
Serve immediately with extra Parmesan cheese on top.
Notes
For extra flavor, sear the chicken breasts whole first, then slice them before adding them back to the sauce.
Use freshly grated Parmesan cheese for the best melting quality and flavor in your Alfredo sauce.
If you prefer a thicker sauce, simmer the heavy cream slightly longer before adding the cheese.
