- 1 pound pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the spinach and artichoke hearts. Cook for 2-3 minutes until heated through.
- Pour in the heavy cream and bring to a simmer.
- Stir in Parmesan cheese, black pepper, and salt. Cook until cheese is melted and sauce is creamy, about 3-5 minutes.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
- Serve immediately.
Notes
- For a richer sauce, you can add a bit more heavy cream.
- Feel free to add cooked chicken or shrimp for extra protein.
- A pinch of red pepper flakes can add a nice kick.
